Crispy Trail Mix

We love trail mix in our house. It makes a great nutritious snack. Nuts can be hard to digest but this recipe calls for crispy nuts which are soaked in salt water to break them down and make them lighter and more digestible.

Here is what you are going to need:

The great thing about trail mix is that you can use whatever nuts or dried fruit you like.

- 1 cup raw almonds
- 1 cup raw peanuts
- 1 cup raw cashews
- 1 cup raisins
- 1 cup unsulphured dried apricots
- chocolate chips

 Make some crispy nuts:

1. Soak the nuts in water with 1 tablespoon of salt. The cashews only soak for 6 hours. The other nuts can soak for 7 hours or overnight.

2. Once the nuts are soaked, drain them and place them in a dehydrator or a cookie sheet.

3. Let them dry in a warm oven (about 150) or a dehydrator for about 10-12 hours or until the nuts are crispy.

Now for the trail mix:

Put all the crispy nuts into a large Tupperware or ziplock bag and add the dried fruit. I did crispy almonds, crispy cashews, crispy peanuts and raisins.

Store in the fridge.  This makes a fantastic, healthy snack.  My husband will even eat a big handful for breakfast.
